A Savagnin from the Jura region, made in the Burgundy style, with floral notes and a hint of pineapple.
This exceptionally elegant wine is a so-called "vin ouillé," meaning it is not oxidized but produced using traditional methods. The grapes come from a single parcel – "Aux Molates."
The result is characterized by floral notes with a hint of fresh pineapple, making it an excellent match for spicy and exotic dishes, such as curry or wasabi!
"Unleashes the aromas, catapults them to the center of the palate, and thus creates unforgettable flavor explosions." – Valérie Closset
The 5-hectare vineyard “Champ Divin” (heavenly field) is located on the first plateau of the Jura Mountains in the Sud-Revermont region.
It has been run by Valérie and Fabrice Closset-Gaziaux since 2008, when they took it over from the Delay family. The estate has a variety of soil types and is influenced by a classic continental climate with moderately cold winters and mild summers.
Here they cultivate Pinot Noir (2 hectares), Chardonnay (2 hectares) and Savagnin (1 hectare), which is also known as "Traminer".
The estate is cultivated entirely without the use of chemicals. The vineyard is worked by hand, with the grass being partially removed and partially left standing to avoid disrupting the delicate balance of the vineyard ecosystem.
To control pests, herbal decoctions (e.g. nettle and chamomile), essential oils, tinctures, as well as copper and sulfur in very small quantities are used.
The grapes are harvested by hand at their best stage of ripeness, when they have developed their full potential.
Vinification and aging are carried out with minimal use of sulfur, and some of the wines mature, as is typical for the region, under a flor veil (yeast), which gives them aromas of dried fruits, nuts and almonds, as well as spices such as saffron and curry.
Interesting facts:
Jura wines are considered very spicy and full of character, pairing excellently with farm-produced cheeses. Today, Jura wines are also fruity, balanced, structured, and reminiscent of wines from nearby Burgundy, all at a very good price-performance ratio.
There are traditionally two types of wine in the Jura: the "vins ouillés" and the "vins typés" .
In the case of "vins ouillés," the amount of wine that evaporates from the barrel is replenished to prevent oxidation through contact with oxygen. These wines are typically characterized by bright fruit notes, a subtle spiciness, and pronounced minerality.
In the case of "vins typés," the evaporated liquid is not replenished, and a desired layer of yeast forms on the surface. These wines are characterized by nutty, yeasty, and salty notes and are not for beginners. They are generally rarely drunk on their own, but rather as an accompaniment to poultry, exotic dishes, or spicy cheeses.
