The chili is the Trinidad Scorpion Moruga from Ecuador, one of the hottest varieties of all, but here it is used sparingly. Sauces Martin supports Amazon Frontlines, an organization that works for the indigenous peoples and their forest.

The tone is set by the passion fruit, with lime, a splash of coconut milk, garlic, and spices added. It tastes of fruit, rind, and root, slightly floral, and the heat only comes afterwards. Heat level 5 out of 12: nicely spicy, for anyone who likes chili, but well within reach.

Sauces Martin is an independent sauce manufactory from Viroflay near Paris, founded by the three cousins Anna, Jean-Baptiste, and Benjamin Martin. Their chilies are harvested ripe, cleaned by hand, and aged as a puree in barrels for around a year before being turned into sauce. To the supplier profile

Made for ceviche, poke bowls, tacos, and salads, also great with grilled food or on raw vegetables.
