It was seasoned primarily with garum, a sauce made from fermented fish entrails; the Portuguese coast was one of the Roman Empire's major production regions. Combining sweet and salty was a natural part of the cuisine back then: dates, honey, and figs were commonly used in savory dishes.

Mackerel and dates in a can: an idea from Roman Lisbon, brought to life by Vítor Sobral.

For this small range, Conserveira de Lisboa collaborated with Vítor Sobral, one of Portugal's most renowned chefs. Three cans were created, all under the "Lisboa Romana" series logo and all featuring ingredients that made it to the table in Olisipo two thousand years ago: Cavalinhas com Tâmaras, Atum de Ânfora, and Cenoura à Romana. "I simply used canning technology to work with the ingredients the Romans used," Sobral says about the project.

Cavalinhas are small mackerel, rich and full-flavored; they make up 70% of the can. The 3% dates provide a dark, almost caramel-like sweetness that does not overpower the fish. Garlic, orange, coriander, and a touch of mustard are also added: This is not a purely sweet-and-salty can, but a seasoned blend that is more reminiscent of the Orient than Portugal. That was exactly the rule in Roman cuisine.

Conserveira de Lisboa produces in Portugal and wraps each can by hand in printed paper at its shop on Rua dos Bacalhoeiros. The fish is packed in olive oil and seasoned with garlic, orange, coriander, and mustard.

Vítor Sobral himself serves the can as a salad: with turnip, fig, mint, almonds, and pepper. It is even easier with toasted bread and a spoonful of the oil drizzled over it. Pair it with a dry white wine with a little body that complements the sweetness of the dates.

Weight: 120 g
Fish: Mackerel 70%, Portugal
Oil: Olive oil
Ingredients: Mackerel 70%, olive oil, dates 3%, garlic, oranges, coriander, mustard, salt
Allergens: Fish, mustard

About Tricana

Tricana has been the Conserveira de Lisboa brand since 1942, just a few steps behind Praça do Comércio—and it is still packed by hand there today. Visit Rua dos Bacalhoeiros →

https://www.maitrephilippe.dk/en/products/cavalinhas-com-tamaras-makrelen-mit-datteln-120g-tricana-conserveira-de-lisboa
