Andalusian Chub Mackerel
Bluish color and silvery belly, very tough and firm skin, completely scaleless except on the front part of the body and along the lateral line. The side has a characteristic edge like that of mackerel.
The spawning grounds are usually near the coast, in fairly warm waters. Therefore, there is a massive influx into the Alboran Sea in June and July.
Fishing is based on the almadraba, a system very similar to that of tuna fishing. Fish that enter the delimited area are selectively caught and guided to the boats thanks to the spread nets. This artisanal fishing method allows the workers to discard the bycatch directly at sea, so that later disposal is not necessary. Another fishing method is the trammel net, a net in which the fish get entangled.
It is prized for its meat. Some of the seals that guarantee the quality of chub mackerel cans are the "Protected Geographical Indication" and the "Supervisory Authority for the Protected Geographical Indication Melva de Andalucía".

Melva de Andalucía Canutera
It has a whitish-gray color, a compact, soft and juicy texture, a pleasant smell and a very characteristic taste that differs from that of other blue fish.
It is called "canutera" when the chub mackerel weighs no more than 600 g. For this reason, it has the appearance of "small canutillos".
