When we think of Spain, we often picture dry plains, flamenco, and the heat of Andalusia. But there is another Spain. In the cool north, from the Basque Country to Galicia, the Atlantic roars. It is the "green Spain" – a landscape that is more reminiscent of Ireland, with steep cliffs, deep forests, and a wild ocean.
It is precisely here, in the Cantabrian Sea (Mar Cantábrico) and the Rías Gallegas, that lies the origin of perhaps the best canned fish in the world.
