A true masterpiece from the Galician coast. The hand-picked Berberechos al Natural by Real Conservera Española come from the Ría de Noia, a stretch of coastline renowned among gourmets worldwide for producing the finest cockles of all.
Craftsmanship & enjoyment: These premium cockles are selected with the utmost care and an official seal of origin at the Galician fish markets of Freixo and Testal. To guarantee they are completely free of sand and retain the purest taste of the sea, the cockles are first cleaned in special seawater tanks for 16 hours after being caught. Then they are gently cooked, removed from their shells, and carefully layered by hand into the can one by one by the master craftswomen of the cannery.
The cockles are preserved in a refined natural broth (al natural) made from their own cooking water and enhanced with a touch of lemon, onion, bay leaf, and sea salt. They deliver a true explosion of flavor: the meat is brilliantly white, incredibly tender, and perfectly complements the broth's maritime saltiness.
The cannery's tip: Enjoy the cockles plain, straight from the can. Do not pour out the liquid! This broth is a highly concentrated, natural seafood stock (fumet), which is delicious on its own or can be used to enhance other dishes. A chilled Galician white wine (such as Albariño, Godello, or Ribeiro) is the perfect accompaniment.
Store in a cool (<35 °C) and dry place until consumed. After opening, store in the refrigerator and consume within 24 hours.
