Mustard on mackerel: common in Portugal, underestimated here.
Tricana places the fillets in a mustard sauce made from mustard preparation, sunflower oil, vinegar, and water. The fish content is 75%, the mustard preparation 15%. Of the 120 g contents, 90 g remain after draining, the rest is sauce, which should be eaten with it. It is canned at the Conserveira de Lisboa on Rua dos Bacalhoeiros, just behind Praça do Comércio.
Mustard and oily fish are an old pair: the acidity of the vinegar and the spiciness of the mustard cut through the fat of the mackerel, just as mustard does with herring here. Unlike the tomato variant, the sauce here remains light and thin, not covering the fish. Those who have only known mackerel in oil until now will find here the can that tastes most like lunch and not like an appetizer.
The Conserveira de Lisboa has been operating for decades at the same location in Lisbon's lower town. The fish goes into the can raw and is cooked in it, together with the sauce. Tricana is a registered brand and is used under license.
Serve the fillets on hearty rye bread, with gherkins and a slice of onion. Also good with warm potatoes, then pour the sauce over them. A beer is a good match, or a dry white wine with acidity. Opened cans belong in the refrigerator.
