Tricana preserves the mackerel fillets in sunflower oil with tomato paste. The fillets lie side by side in the shallow can, covered by a dark red, thick sauce. Unlike the oil cans, the sauce is part of the dish; it is eaten with the fish rather than drained off.
Everyone in Portugal knows mackerel in tomato; it is the quintessential everyday meal. The difference lies in the sauce: here it is made from tomato paste and is not diluted, so it has a correspondingly robust flavor, sweet and tangy at the same time. The mackerel is fatty enough to stand up to it. Those who like it spicy should choose the Picante can with piri-piri; this one is mild, and the version for children and anyone who wants to taste the fish.
Tricana fills the cans in Lisbon using the traditional Portuguese method: the fish goes into the can raw and is cooked inside, together with the sauce. This allows the tomato flavor to infuse the fish during cooking, rather than just coating the outside.
Serve the fillets with the sauce on hearty bread, or pour the entire contents of the can over hot spaghetti with a little parsley. Classic Portuguese accompaniments: boiled potatoes, a hard-boiled egg, and a few olives. A well-chilled Vinho Verde is a perfect match.
