An onion with its own seal of quality, this time velvety smooth instead of chunky – for those who prefer it creamier.
Castel Riquet is a family-run business owned by the d'Arnal family in Saint-André-de-Majencoules in the southern Cévennes (Gard), which has been growing Oignon doux des Cévennes since 1975 – the mild sweet onion that has carried the AOP seal since 2008. For this velouté, the onion makes up 80% of the product, puréed with bouillon, butter, crème fraîche, milk, salt and spices. The jar contains 650 g and is ready to serve.
Compared to the soup from the same house, the velouté is noticeably richer: with 16 g of fat and 12 g of saturated fatty acids per 100 g (soup: 9.6 g and 8 g respectively), the crème fraîche and milk provide a silky, full-bodied texture instead of the soup's rather clear consistency.
Production: The onions grow on the terraced granite soils of the estate, mostly planted and harvested by hand. They are processed by Traiteur des Garrigues, the estate's partner business for confit, soup and velouté.
Heat gently before serving; do not boil. After opening, store in the refrigerator and consume promptly.
Did you know: Oignon doux des Cévennes AOP
Oignon doux des Cévennes has been protected as an AOP since 2008 – only onions from a defined area in the southern Cévennes, grown using traditional methods on the characteristic terraced fields, may bear this name.
