These tiny, silver-shimmering sardines from the Galician bays (Rías Gallegas) are a masterpiece of traditional craftsmanship and a must-try for every tapas lover.

The Art of Traditional Processing

What sets these sardines apart from almost all other canned fish on the market is the enormous effort involved in their production: After being caught, the sardines are cleaned individually by hand (the head, tail, and entrails are carefully removed to avoid damaging the delicate fish). Then, following age-old Galician tradition, they are carefully roasted over a grill (emparrilladas). This crucial step gives the tender flesh its perfect, compact texture, so that it does not break apart in the oil.

Finally, the sardinillas are sorted precisely by size and artfully layered into the can one by one by the Artesanas.

Maturation in Olive Oil

To complete the process, the can is filled with a specially blended olive oil cuvée (85% mild olive oil, 15% robust extra virgin olive oil). And this is where the real magic begins: High-quality vintage sardines like these continue to mature in the can. Over time (with a shelf life of up to 6 years), the flavors of the fish and the oil blend together. The texture becomes increasingly creamy, and the aroma deeper. (Tip: Never throw away this intensely flavored oil—dip bread in it instead!)

Sardines are incredibly versatile:

• Pure indulgence: Serve the sardinillas directly from the beautiful can.

• On toasted bread: Place the small fish on a crispy piece of baguette that has been lightly spread with salted butter or a little fresh tomato. A few fine, paper-thin red onion rings perfectly round off the tapa.

• Wine pairing: A fresh, mineral white wine (such as an Albariño) or a dry Fino sherry is an excellent match.
