Tricana has been the brand of Conserveira de Lisboa since 1942. It is located on Rua dos Bacalhoeiros, the street of the cod merchants, a few steps behind Praça do Comércio. The cans are packed by hand there and wrapped in printed paper.
Inside are whole tuna fillets, not the minced pieces found on supermarket shelves. They are preserved in vegetable oil with tomato, plus salt—nothing more is listed on the label. This is what sets this can apart from the other Tricana preserves we stock: the bacalhau and white tuna come in pure olive oil, while here, the more neutral vegetable oil carries the tomato.
The fillets remain whole in the can but are still somewhat soft; they only start to break apart when you press them with a fork. The tomato is not a thick sauce, but mild and thin, and it soaks into the fish rather than overpowering it.
It is easiest on bread, roughly crushed with a fork. It is just as good stirred into hot pasta or into a rice salad, where the tomato oil doubles as the sauce. A classic is salada de atum: fillets, boiled potatoes, onion rings, and a few olives. Serve with a young Vinho Verde.
