À lagareiro means: so much olive oil that even the oil presser himself couldn't improve on it.
The cod is fried before it goes into the can, and only then marinated in olive oil with garlic. That is the difference with Bacalhau com Alho, which has the same four ingredients, but is marinated raw. When you open it, you see large light pieces with browned edges, with garlic in between.
Bacalhau à lagareiro is a Sunday dish in Portugal: cod in the oven, drowned in olive oil, served with potatoes flattened with the fist. The name comes from the lagareiro, the man at the oil press, and is a statement about the amount of oil. The frying gives the fish roasted aromas that the marinated Bacalhau does not have, and makes it firmer. With 25 g of protein per 100 g and just under 6 g of fat, the can is leaner than the dish sounds.
Tricana is the brand of the Conserveira de Lisboa, which has been located since 1930 on the Rua dos Bacalhoeiros, the street of the stockfish merchants. The cod is desalted, fried, and placed in the can by hand, then filled with olive oil and garlic. The cans are wrapped in printed paper there.
Heat the contents of the can briefly in the pan, then the oil gets moving again and the garlic smells like freshly fried. Serve with boiled potatoes or bread, a little parsley, black olives. A Vinho Verde fits, a simple Red from the Douro too.
