Oregano on mackerel: the Mediterranean version, and the leanest in the range.
Tricana marinates the fillets in olive oil and seasons them with oregano, nothing else. The fish is caught off the Portuguese coast, placed in the can without skin or bones, and packed by hand. When opened, the fillets lie neatly side by side, the oil is clear and smells of dried herbs.
Oregano brings a different flavor than thyme: more bitter, slightly peppery, with the bitterness known from Italian and Greek cuisine. This can is significantly leaner than the one with lemon thyme, with 10.1 g of fat instead of 26 g, but has the highest protein content in the range. This is the one to choose if you buy mackerel as an everyday meal rather than a delicacy.
Tricana works in Lisbon according to traditional Portuguese methods and rejects mass production. The fillets are placed in the can by hand, marinated raw, and cooked inside. They are preserved using only olive oil and salt.
Serve the fillets on bread with tomato slices, or flake them over a salad with red onions and olives. Also good on hot pasta with a little garlic. A simple white wine is enough, or a Vinho Verde.
