Wonderful wonder bag: sweet on the nose, crisp and dry in the mouth

The big surprise follows with the first sip: the wine is crisp and dry, wonderfully fresh and refreshing, with a delicate body – no trace of fruity sweetness remains.

100% Moscatel Galego from 35-year-old vines planted on a small vineyard of just 2 hectares on a mixture of slate and granite soils. The vines, harvested by hand in September, undergo intensive vineyard sorting, are partially destemmed, but not pressed and macerated for four months. Spontaneous fermentation takes place in cement tanks (5000L) with ambient yeasts and lasts about three weeks under temperature control. After pressing, the wine spends about two months on the lees without being stirred. The wine ages for six months in cement tanks; it is neither fined nor filtered.

A young, seductive wine, particularly suited for the warm season. Serve beautifully chilled, preferably between 6 - 8 °C.

Pairs well with: Asparagus, goat cheese, fish, as an aperitif, and is very versatile on its own or as an accompaniment.
