Breton Cookie Art with Heart and History
Galettes from Brittany – the Story Behind Atelier D
Sometimes it takes a loss to create something beautiful. When Delphine Vannoote returned to her hometown of Concarneau after the sudden death of her mother Dominique, she found something unexpected in the estate sale: detailed records for her own cookie production, based on old traditional Breton recipes. The marketing manager from Paris did not hesitate for long. She would continue where her mother had left off.
In 2020, she founded the brand Atelier D – the "D" as a silent tribute to Dominique, whose childhood photo in traditional Breton costume has since adorned many of the packages.
The philosophy behind it is quite simple: as Breton as possible. Butter – the most important ingredient, up to 30 percent – comes from Brittany, as do the flour and a pinch of Fleur de Sel from Guérande.
Production takes place in Lorient, the heart of Breton cookie making. The result is around 30 varieties, including the two classics of the region: Galettes, thin and crispy, and Palets, thicker and buttery-crumbly.
Particularly noteworthy are the Galettes with caramel shards from the traditional house La Maison d'Armorine – a cookie that was awarded bronze at the renowned fine food trade show Rencontres du Monde de L'Épicerie Fine 2021. A year earlier, a buckwheat-spirulina shortbread even won gold.
