Cassoulet is a traditional stew from southern France made with white beans, bacon, sausages, and confit duck or, in this case, goose meat.
This cassoulet is particularly festive thanks to the tender confit d'oie from Périgord!
The Vidal family business is based in Cénac in the heart of Périgord, a region also known as the “triangle d’Or,” or France’s golden triangle, thanks to its agricultural fertility. The company is run by Pascal Vidal, who is assisted by his wife, his son, and eight other employees. Vidal supplies selected delicatessens throughout Europe.
Pascal Vidal is a trained chef and a culinary virtuoso with a passionate love for bold flavors, which can be found in his preserves. All the preserves are based on traditional regional recipes that offer entirely new taste experiences through modern variations. The confits and cassoulet are a true delight for the palate, but lesser-known dishes such as braised goose with chestnuts also make gourmets’ hearts beat faster.
Particular care is taken in selecting the ingredients, which come exclusively from the region and bear the protected geographical indication seal of Périgord.
