What a can. Not just a tin – no, a millésime.
Like a fine wine, it bears a vintage: the summer of 2025, that moment when the sardines off the Breton coast had reached exactly the right fullness to be preserved. Freshly caught in the North-East Atlantic, carefully nestled in extra virgin olive oil, a touch of salt – nothing more is needed when the quality of the raw product speaks for itself.
With time, this tin becomes something special. The flesh becomes more tender, the aromas rounder, deeper. You turn the tin every six months – a small ritual that rewards patience. The French know: the best things are left to mature.
The tin itself tells a story. Géo Fourrier, known for his images of the maritime heritage of the Pays Bigouden and his travels to Japan and Africa, has given it an image: “La Brûleuse de Goémon” – a woman of the coast who burns seaweed, as has been tradition in Brittany for centuries. An image of work, of the sea, of a world that is slowly fading. You put this tin on the shelf and like to look at it before finally opening it one day – perhaps in two, perhaps in five years.
With good bread, a drizzle of olive oil. Nothing more is needed.
