Tricana cures the mackerel fillets in olive oil and adds lemon thyme, an herb that smells of lemon but brings no acidity. The fish content is 75%, more than in the other cans in the range. The mackerel is caught off the North Atlantic coast of Portugal.
Where the lemon can works with acidity, this one works with herbal seasoning. The thyme adds a resinous, slightly lemony aroma to the fish without making it leaner. And this can is not lean: 26 g of fat per 100 g, significantly more than its siblings, due to the high fish content and the olive oil. Accordingly satisfying and accordingly full-bodied. Of all the Cavala cans, this is the one for people who really like mackerel.
Tricana has been operating in Lisbon since 1942 and rejects mass production. The fish goes into the can raw and is cooked inside, along with the oil and herbs. It is preserved using only olive oil and salt.
Serve the fillets plain on toasted bread, along with the oil, which has absorbed the thyme flavour. Also great with warm potatoes or in a salad with white beans. Pair with a dry white wine from the Douro or a Vinho Verde.
