Sardines in a spicy sauce of chili (piment), tomato and garlic.
This recipe dates back to Georges Hilliet, the founder of Belle Iloise, who had a habit of preparing a spicier version of sardines in tomato sauce for himself.
On the advice of his friends, he added this recipe, originally intended only for personal consumption, to his range under the name Pitomaïl (piment, tomate, aïl / chili, tomato, garlic).
That was in the 1960s – today the recipe is one of Belle Iloise's bestsellers.

The sardine is still today the focal point of many port cities in Brittany, but also in Spain and Portugal. It is not considered an endangered species.
