🍯 A Sign of Purity: Why Your Honey Crystallizes
Dear Customers,
The crystallization of honey is a phenomenon that raises questions about quality for many. We would like to reassure you: If your honey solidifies, it is a clear sign of its natural state and purity.
The Schießbeere honey (Miel de Bourdaine) from Miels de Joyeuse is harvested in the heart of the Plateau de Millevaches in the Limousin Regional Natural Park, a wind-swept granite plateau in the Massif Central with numerous springs, moors, and peatlands.
The honey is aromatic and fruity, without acidity or bitterness, with a slightly vegetal-balsamic note and a gentle, rounded finish.
Schießbeere honey is a rare specialty: The Schießbeere bush grows wild at the edge of damp forests and along streams, blooms with small, whitish flowers for only a short time from late May to early June, and provides a significant nectar flow in only a few places in France.
Unlike most varieties of honey, Schießbeere honey is almost neutral in pH, which results in exceptionally slow fermentation.
This leads to very fine crystallization and a balanced grain. Harvested on one of France's wildest plateaus.
