Did you know: Kalamansi
Kalamansi is a small citrus fruit from the Philippines, a cross between a mandarin and a kumquat. Its juice tastes like lime with a hint of mandarin, less bitter than lemon.
The butter sauce for sardines: lemon, kalamansi and shallot, made by a sardine cannery from the Vendée.
La Perle des Dieux in Saint-Gilles-Croix-de-Vie on the Vendée coast has been canning fish for 130 years. With La Zestée, "the Zesty one", comes the third sauce in the range, the latest in the lineup: a creamy sauce made from milk, cream and butter, soured with cider vinegar, kalamansi juice and fresh lemon juice, plus shallots. The 130-g jar contains a pale, smooth cream, and the portion is enough for one can of fish and two slices of bread.
It tastes of citrus first, then of butter: the kalamansi juice makes up the largest part of the acidity at 6.6%, the lemon provides just the finishing touch, while the shallot brings a light sharpness underneath. It is richer than the Persillée from the same range and closer to a beurre blanc than to a lemon mayonnaise: no eggs, no sugar, no mustard.
The base is milk, cream and sweet cream butter, plus cider vinegar, shallots, kalamansi juice, fresh lemon juice, a little flaxseed fiber for thickening and Sel de Guérande. The sauce is cooked down in the jar and is shelf-stable without refrigeration if unopened.
The manufacturer recommends it with sardines in olive oil, and the house recommendation is simple: toasted country bread, topped with the sauce, sardines in olive oil and a few rings of raw shallot. It is equally suitable for grilled fish, salmon, prawns and scallops, cold from the jar or briefly warmed. Take it out of the refrigerator before serving, then the butter softens and the lemon comes through.
